Let’s bake: Banana Bread

The best thing about having my own apartment is having my own kitchen to make lots of different recipes. I absolutely love baking and when I moved in my granny bought me a little mixer as a housewarming gift to encourage me to bake more.

I recently bought some bananas and was complaining to my mum at how quickly they went quite black, I didn’t want to be wasteful and have to throw them away, I’d only just bought them. So my mum suggested I try baking something with them and gave me this really quick and simple recipe for Banana bread.

Preparation time: 15 minutes
Baking time: 60 minutes
Ingredients:

  • 2 ripe bananas
  • 4 ounces soft margarine
  • 6 ounces castor sugar
  • 8 ounces self-raising flour
  • 2 large eggs
  • 1 leve tsp baking powder
  • 2 tbs milk

Recipe:
Put bananas in the mixer and using a beater, beat bananas until mashed.

Add all the other ingredients and mix well

Put into a prepared loaf tin and bake in the centre of a preheated oven for 60 minutes at 180 degrees until will risen and golden.

Remove from loaf tin and allow to cool on a cooling rack before serving.

This bread is really tasty, the bananas make it nice and moist. Its great at anytime of the day with a cuppa but I love to have it in the morning for elevensies as I like to think of it as a sweet breakfast treat.
